Introducing my latest addiction – Beetroot and Horseradish Soup. This stuff is amazing and super easy to make too.
Serves 1-2 people
1 red onion, finely sliced
1 large potato, diced
1 bunch of small or medium beetroot, washed and diced, leaves discarded,
1/2 a litre of vegetable stock
3 tablespoons of horseradish sauce
Red onion – I have used both red and white and it makes no taste difference (to me at least.)
Beetroot – I’ve yet to track down uncooked beetroot, so I have been using the pre cooked stuff in vacuum packs from Tesco and this works fine. I just add it in 15 mins after the potatoes.
Vegetable stock – 1/2 litre is the average I use, you just need enough to cover all of the ingredients.
What to do….
Saute the onion in a pan with a drizzle of olive oil until it has softened.
Add the potato and beetroot and cover with the vegetable stock. Simmer until the veg has softened.
Add the horseradish sauce and blend.
Voila! How easy is that?!
I was shocked at how quick and simple this soup was to make, it normally takes half an hour.
I whack the leftovers in the fridge and it is good for a couple of days. The recipe says serving 1-2 people, however I manage to get three portions out of this.
