Pizza seems to be having its five minutes of fame of late, which is all well and good if you can actually eat it! Yes, Domino’s offer an over priced Gluten free pizza but it doesn’t taste that great and there is still the dairy issue. Tesco also do GF pizza bases but they don’t taste too great either. Basically I’ve been on the hunt for a yummy pizza recipe that doesn’t involve faffing with yeast that I can use my ‘fake’ cheese on or even without it. I appear to have found the one! So here’s my Gluten, Wheat and Dairy free pizza recipe.
It turns out all I needed to do was whip up a simple scone base!
(Makes 1 pizza)
115g Gluten Free Self Raising Flour
1/2 tsp Xantham Gum
25g of Pure Sunflower Spread (or other dairy free alternative)
1 small egg or 1/2 a large egg
N.B. This also works with non dairy/gluten free equivalents, just skip the Xantham gum if using glutenous flour.
Preheat the oven to 180 oc (200 if you have a non fan oven)
Rub the flour, xantham gum and spread together until it resembles bread crumbs.
Crack in the egg and mix together.
Add in enough Soya Milk so it forms a dough.
Gently kneed, before spreading the mixture out evenly on a baking tray.
If the mixture is particularly wet, bake for 5 mins before adding your toppings. If not top and cook for 15-20 minutes or until golden.
Basically the sky is the limit! In the picture above, I used BBQ sauce as a base and spinach as a cheese substitute. I then threw on some prawns and mixed peppers.
Other concoctions have included BBQ chicken and chorizo with peppers and dairy free cheese and pesto, prawn and spinach.
The beauty of Pizza is that anything goes!

Anyway, this is a delicious recipe that is so quick to whip up. It takes me half an hour to make this pizza, which is quicker and much healthier than Domino’s!
