When it comes to snacks, there are two things I love – a delicious cookie and a bag of popcorn. The other day I had a bag of Propercorn hanging around and decided to combine my two loves into one sweet and salty cookie. There’s just something incredible about the combination of chocolate and salt. Throw in a gooey cookie base and I’m in heaven! So read on if you want to see my recipe for these delicious milk chocolate and salted Propercorn cookies.
These cookies are delicious! They are light, fluffy and the popcorn adds a nice little crunch. They are sweet but not overly so thanks to the addition of the salt. My milk chocolate and salted Propercorn cookies can be made in no time. It’s one of those recipes that you can mindlessly throw together and you always end up with a delicious treat!
Makes 20 small cookies or 8 large cookies.
1/2 cup of margarine
3/4 cup brown sugar
1/4 cup granulated sugar
1 tsp. vanilla extract
2 tsps of salt
1 1/2 cups of self-raising gluten free flour
2 cups of chocolate chips
3/4 of a single serve packet of Propercorn Salted Popcorn
Preheat the oven to 200oc or Gas mark 5.
Cream together the butter and sugar, before adding in a beaten egg and the vanilla essence.
Mix until smooth and creamy.
Add in the flour and salt and slowly combine until the mixture is thick and has no lumps.
Finally, add in the chocolate chips and Propercorn Salted popcorn and carefully mix until they are evenly distributed in the mixture.
Take two teaspoons and dollop the mixture onto a lined baking tray, before leaving it to bake for ten minutes.
When they are cooked the chocolate chip and salted Propercorn cookies should be a golden colour, with the edges slightly darker.
Leave to cool on the try for five minutes, then transfer onto a wire rack.
When they are completely cool, pop them into a seal container and they will last for around five days…if you don’t eat them before that!
So go on, treat yourself and make a batch of my milk chocolate and salted Propercorn cookies. They are the perfect elevenses snack and are great to whip up for parties or girls night’s in. Pair with a cup of Two Chimps Coffee in the week or a decadent hot chocolate at the weekend. I don’t think I’ll ever get bored of making these.
