Cosy knits, giant scarves and steaming hot bowls of soup are what Autumn is all about! As the crisp chill in the air lingers, I’m forever reaching for a tasty bowl of soup. Whilst it may be tempting to stock up on tins of soup, a good homemade soup is much more nutritious. It is also really simple to make and store, so a large batch will last you at least four days. I had recently found a roasted tomato and red pepper soup recipe and decided to give it a whirl. Tomato soup is the best flavour in my opinion, you can’t go too wrong with a classic! Roasted Tomato and Red Pepper Soup Recipe


This roasted tomato and red pepper soup recipe makes enough for 7 portions.

You Need:

16 Large Tomatoes

4 Red Peppers

4 Tbsp of herbs (basil or mixed herbs work well)

2 handfuls of fresh basil leaves

400g cannellini beans

5 tbsp tomato puree

1 litre of vegetable stock

Salt and pepper to season

Scarlett and Mustard Auntie Frogs Lime and Chilli Dressing to swirl over the top

A toasted gluten-free (or regular) bagel for dipping


To Do:

Slice the tomato and peppers, drizzle with olive oil and cover with herbs before roasting at 200 oc or Gas Mark 5 for half and hour.

Make up the stock, add this, the roasted veggies and all of the other ingredients into a blender and whiz up until smooth.

If you’re eating it straight away heat it up on the hob, if you’re not, let it cool and store in an air tight contain for up to a week in the fridge.

The soup also freezes well, so feel free to double up and store it in the freezer!

The result is a light and delicious tomato soup that leave you full, warm and fuzzy for hours. If you’re a soup lover it’s worth finding a plastic soup container (like this), so you can take it to work and microwave it at lunch. The addition of the Scarlett and Mustard Auntie Frog’s Lime and Chilli dressing (read more) gives the soup an added bit of zing. It’s perfect for mixing the soup up a bit. Eating the same soup everyday for 7 days does get a tad boring!
