Food Dairy Friday // Almond & Chia Energy Bites

If you’re looking for a healthy snack that’s easy to make and requires no cooking, then these almond & chia energy bites are perfect for you. They take minutes to create and are the perfect 11am pick me up. They are sweet enough to satisfy those sugar cravings and they don’t taste too healthy so it’s like having a little treat!

Almond & Chia Energy Bites

Makes 10

You Need:

100g of almonds

200g Medjool Dates

2 tbsp of raw cacao powder

1 tbsp Almond Butter

1 tbsp of melted coconut oil

1 tbsp chia seeds

To Do:

Whiz the almonds in a food processor until they are crushed. Whilst that’s whizzing away, pit and cut up the dates into tiny chunks.

Throw in all of the ingredients with 2 tbsp of water and whizz again until everything is sticky and combined.

Roll into balls and put in the freezer for an hour, before moving them to the fridge. Quick tip – if you’re not planning on eating them right away and your freezer is full, leaving them in the fridge over night works too!
