Recently I’ve fallen back in love with my American Cookies and become somewhat of a cookie fiend! With Christmas just around the corner I decided to switch things up a bit and go in search of a festive cookie recipe. I stumbled across one for dark chocolate and pecan cookies and decided to give it a go. It wasn’t as festive as I’d have liked, but there’s always chocolate and nuts hanging around at Christmas! Oh boy are they good – they’re so light, soft and delicious… they’re pretty more-ish too!
200g dark chocolate, broken into squares,
50g light muscovado sugar
85g coconut sugar (or golden caster),
1 tsp vanilla extract
100g whole pecans
100g buckwheat flour (or plain),
1 tsp baking powder
Heat the oven to gas mark 5 or 200oc.
Melt the dark chocolate (mine took 1:30 in the microwave),
Beat the sugar, eggs, vanilla, before stirring in the chocolate, 3/4 of the pecans, the flour and baking powder. The mixture should be light and gloopy.
Take a tablespoon and scoop out the mixture onto a lined baking tray. Make sure there’s a decent gap between them all as the mixture will spread. Top with the remaining walnut before baking for 15 minutes.
Leave to cool on the tray for 10 minutes, before transferring onto a wire rack.
And there you have it, delicious dark chocolate and pecan cookies in under half an hour.
