Mediterranean Pork Stew Recipe – Simple, Light and Warming

Sometimes all you want is a hot meal ready and waiting when you walk in the door on a cold evening. Unfortunately for me, I’m always the first one home, therefore the one that cooks. (You can probably tell by the sheer ammount of recipies on here! That is where my trusty slow cooker comes in! It has to be one of the best inventions ever.  I’ve had the photos hanging around for the recipe for ages now. They are iPhone ones so sorry for the quality!  Without further ado here’s my deliciously warming mediterranean pork stew recipe.

Mediterranean Pork Stew Recipe

You Need:

Olive oil

4 boneless pork chops

2 tsp diced garlic

1 sliced onion

2 sliced red peppers

2 sliced yellow peppers

1/2 cup of pitted black olives

400g chopped tomatoes

500ml vegetable stock

1 bay leaf

2 tsp diced chilli (optional)

To Do:

Fry off the onion, chilli (if using) and garlic until golden, add in the peppers and stir fry for 5 minutes.

Add in the diced pork chops and cook for a further five minutes.

Add the onion, garlic, peppers and pork into the slow cooker, along with the tomatoes, bay leaf and stock.

Give it a good stir and leave on a low heat for 9 hours (i.e. long enough to cook whilst you are at work).

Stir the stew and add the olives in before serving.

There you have yourself a quick, simple, warm and hearty meal, ready and waiting for you the second you walk in the door. The dish would work well with rice, pasta or additional vegetables. It is a light, yet warming meal that is a twist on the classic stew.
