You know when you have a great idea for a blog post, write it down, put it in your schedule and then forget to photograph all of the exciting food you’ve been having all week? Yeah. Well that’s exactly what happened. I’ve left it to the worst day possible to do this post – a Sunday. The normal three meals a day structure tends to go out of the window at the weekend. But hey ho… just keeping it real! So here’s my what I eat in a day post.
Breakfast – I always start the day with a juice or a smoothie and today I had the Asda apple, asparagus and lime juice in the fridge. I added in my fibre and super food mix and downed it in one. I then took my steroid tablets, before pottering around for a bit and making a banana crumble to waste the half an hour I needed to wait before eating!
I chopped up four bananas, added a dash of lemon juice and a good squeeze of maple syrup over the bananas. I then measured 150g of buckwheat flour and 100g of dairy free spread and rubbed them together to form breadcrumbs. That was tipped over the bananas and baked for 45 minutes. It was delicious!
Lunch – Well lunch didn’t really exist today. I had a bit of lay in so breakfast was more of a brunch kind of thing.
Dinner – Lemon chicken with a plethora of vegetables. Lemon chicken thighs has to be the easiest and most delicious meal ever. All you need to do is squeeze a whole lemon over the chicken and grate the zest over it before whacking it in the oven for 35-35 minutes. Crispy skin heaven right there!
Snacks – I made up some chocolate and chia cookies and had one of those with a cup of cafe direct coffee from the co-op. The Machu Pichu blend is insane! I also had a peach and black tea juice drink with some spicy chickpeas to snack on in the afternoon. Along with my normal two litres of water of course.
